Salmon Hash

Ingredients

  • 1 pound fresh salmon fillet, skin removed

  • 1 bag frozen potatoes, or fresh cut and pre-cooked

  • 1 red bell pepper, diced

  • 1 green bell pepper, diced

  • 1 red onion, diced

Directions

  1. Preheat oven to 350 degrees F. Bake salmon until cooked through. Set aside. In a large skillet on medium-high heat, cook red onions until translucent. Add potatoes and peppers.
  2. Cook, stirring often 5-7 minutes or until potatoes are soft and veggies cooked through. Add salmon to the mixture, then salt and pepper to taste. Serve with horseradish sour cream mixture!
