Ingredients
2 apples (Gala, Fuji or Granny Smith)
1 teaspoon cinnamon ground
2 teaspoons coconut sugar

Preheat oven to 200°F. Line two baking sheets with parchment and place a raised wire rack on top of parchment. Wash and thinly slice the apples using a sharp knife or mandolin, remove seeds. Mix cinnamon and coconut sugar together in a small bowl and set aside. Place the apple slices onto the wire racks in a single layer, making sure they do not overlap. Sprinkle with cinnamon-sugar mixture.

Bake for 1 hour, then flip the apples over. Feel free to sprinkle with more cinnamon and sugar. Bake for another 1 to 1.5 hours. Turn the oven off and keep the apples inside as the oven cools down for 1 hour. Store apple chips at room temperature in an airtight container for up to one week.
