A big part of our mission is to provide the latest information about health, nutrition and wellness to our community. So we invite top local experts and educators, including natural chefs, holistic nutritionists, acupuncturists, herbalists, and naturopathic doctors to share their knowledge with you in classes and workshops we host here at New Leaf. With Chef Laura Casasayas-Pala Come explore whole ingredients and learn how to create easy and healthy recipes!  Summer is just around the corner, a time where it can be tempting to eat a lot of ice cream and other sweets that are full of processed sugar. Developing cooking skills is an awesome thing to do at a young age! In this hands-on dessert making class, your child will experience curiosity for how food preparation works, nutrition education and using our senses- sight, smell, taste, touch!  In addition to cooking, Laura will also touch on nutrition, vitamins and other nutrients and how it is important for our health and growth. In this class we will make: Chocolate Dipped Fruit Kebabs, Pineapple Ice Cream with Coconut and Peanut Butter, and a Classic French Fruit Tart. Ages 7-11. *NOTE: if your child has special needs of any kind, please come 15 minutes early to speak with the instructor. About the Instructor: Laura is a Spanish Acupuncturist, Dietitian and creator of the 11th Hour Coffee food menu. Laura has more than 10 years experience running her own practice in Spain offering private consultation and workshops. She recently moved to Santa Cruz where she is continuing her passion of educating and expanding awareness of mindful and healthy eating.

Movie Night: Forks Over Knives

Forks Over Knives (2011) is an film that examines a profound claim that food is medicine! The major storyline in the film traces the personal journeys of a pair of pioneering researchers, Dr. T. Colin Campbell and Dr. Caldwell Esselstyn, and their groundbreaking studies that brought them to meet each other. Their research led them separately to the startling and now shared conclusion: degenerative diseases like heart disease, type 2 diabetes, and even several forms of cancer, could almost always be prevented—and in many cases reversed—by adopting a whole-foods, plant-based diet. Despite the profound implications of their findings, their work has remained relatively unknown to the public... until now. The filmmakers travel with Drs. Campbell and Esselstyn on their separate but similar paths, from their childhood farms where they both produced “nature’s perfect food”; to China and Cleveland, where they explored ideas that challenged the established thinking and shook their own core beliefs. The idea of food as medicine is put to the test. Throughout the film, cameras follow ‘reality patients’ who have chronic conditions from heart disease to diabetes. Doctors teach these patients how to adopt a whole-food, plant-based diet as the primary approach to treat their ailments—while the challenges and triumphs of their journeys are revealed. Forks Over Knives utilizes state of the art 3-D graphics and rare archival footage. The film features numerous leading experts on health, examines the question “why we don’t know,” and tackles the issue of diet and disease in a way that will have people talking for years.

Wellness Class with Dr. Danette Sutton Summer is almost here! Have you ever wondered about the ingredients in your bottles of sunscreen? This class will expose the hidden dangers in sunscreen products and teach you what ingredients to avoid. We will also go over what is desirable in a sunscreen product, and other body care products, as well as the role Vitamin D, the sun, good fats and minerals, and a healthy gallbladder, all play in avoiding a sunburn while maintaining healthy skin at the same time. Dr. Sutton will talk about what chemicals are hormone dysregulators and how they impact our health negatively. Learn how to avoid sunburns and how to treat them naturally when they happen. Bring your favorite sunscreen product and we will evaluate it during the class.

With Chef Laura Casasayas-Pala Summer nights in Barcelona are known for casual dinners, good conversation and flowing wine. Mediterranean cuisine, and ingredients found in the Mediterranean Diet, are based on a wide variety of foods found in a number of countries in this area: France, Spain, Italy, Greece, and Portugal along the north; Turkey, Syria, Lebanon, and Israel on the east; and the African countries of Egypt, Libya, Algeria, Morocco, and Tunisia on the south.  Barcelona is one of the culinary power houses of Mediterranean cuisine. The combination of these food items and the many ways they’re prepared specific to the region they come from, is at the heart of what makes Mediterranean cuisine so very unique and flavorful.  An added bonus is that many Mediterranean cuisine not only tastes good- it is good for you! Join us for a culinary night to the Mediterranean to explore a variety of delicious dishes coming from the cosmopolitan and foodie city of Barcelona. We will make: Watermelon Gaspacho Fricando (meat stew with mushroom sauce) Breaded Cod on escalivada mousse Meringue Milk This meal will be paired with two wines relative to this area. About the Instructor: Laura Casasayas was born in Catalonian, Spain and raised around food, stories and traditional cooking. Her grandmother taught her the magic of what ingredients make a delicious, nutritious homemade Spanish dish. Laura is a Spanish Acupuncturist, Dietitian and creator of the 11th Hour Coffee food menu. Laura has more than 10 years running her own practice in Spain. she Recently moved to Santa Cruz and has a very strong desire to keep educating and expanding awareness in mindful and healthy eating.

Learn to Shop on Your Bike!

With Matt Miller, Program Specialist at Ecology Action Every wonder what it would be like to ride your bike for a grocery store run? The freedom of movement, the easy bike parking right up front, and not hassling with parking your car. In this new class we'll look at making your trips to the grocery store by bike. How are you supposed to carry all of your goods on two wheels? We'll peel back the layers on how make a store run successful. Do I need a basket or panniers? What even is a pannier anyway? Different ways to pack your supplies, distributing weight, and knowing when too much is too much. The best part is, you can add that extra dessert item to your grocery list because you biked there, you need the calories to get home! Join us to learn the ins and outs of shopping by bike. About the Instructor: Matt Miller works as the Sustainable Transportation Program Specialist for Ecology Action. Among other projects, he manages Santa Cruz County Bike to Work Day. He's been bike commuting in Santa Cruz for 10 years and has several hundred successful grocery store runs by bike to his credit. Whether it's making a quick run for meal ingredients or stocking up for the week, Matt has done it all. From grocery shopping, to moving houses, to biking cross country, Matt brings a depth of bike experience that will help unpack the nuance to shopping by bike. Regional Spanish Cooking: Tapas and Wine

With Chef Laura Casasayas-Pala Join Chef Laura in preparing fine versions of the most tasty and authentic Spanish Tapas. Enjoy experimenting with different textures, flavors and ingredients in this hands-on cooking class that will feature: Salmorejo Cordobés, Melon and Salmon Tartar, Cream of Potato with quail egg, and Chorizos in cider. All paired with Spanish wine to sip throughout class. Do you know where the word "tapas" comes from? King Alfonso XIII was on an official visit to Cadiz, southern Spain, sitting in a restaurant next to the beach. He asked for a glass of wine. Suddenly the wind rose. The waiter covered the wine glass with a slice of ham. The king, curious, asked why the waiter had done that. He explained that he had put a TAPA (top in English) to the cup to protect the Wine from the Sand. The King liked the idea and when he finished his first glass of wine he decided to order another glass of wine with the same TAPA. That's why in some of the wineries and bars in Spain offer food with your glass of wine or beer. About the Instructor: Laura Casasayas was born in Catalonian, Spain and raised around food, stories and traditional cooking. Her grandmother taught her the magic of what ingredients make a delicious, nutritious homemade Spanish dish. Laura is a Spanish Acupuncturist, Dietitian and creator of the 11th Hour Coffee food menu. Laura has more than 10 years running her own practice in Spain. she Recently moved to Santa Cruz and has a very strong desire to keep educating and expanding awareness in mindful and healthy eating.

With Chef Eric Adema, Owner of Plus 1 Catering Vietnamese food is considered by many to be the best of the southeast Asian cuisines, possibly due to the culinary influences acquired during the French occupation. Unique, tasty combinations were the result and their world-famous street food is no exception! In this class you will learn how to make fresh shrimp springrolls with mint, greens, & mung bean sprouts. We will make pho’ noodle bowls with homemade star anise bone broth, rare beef, herbs & fresh lime. Class will finish with Vietnamese crepes with cardamom rubbed pork. As a bonus, this class will offer a sweet slow drip coffee demo which will also be available to taste for anyone needing a little “pick me up.” Beer or Sake will be available to pair with items as we snack on our creations throughout the evening for those 21+ About the Instructor: Chef Eric Jan Adema first learned his passion for food while cooking his great grandmother’s recipes with his mother as a kid. In 1989 his family took over the Boulders Inn in Connecticut, and by age 24 he became the head chef . In 2003, Eric moved to San Francisco where he worked as a chef & restaurant consultant for over 10 years. He now lives in Boulder Creek .
