A big part of our mission is to provide the latest information about health, nutrition and wellness to our community. So we invite top local experts and educators, including natural chefs, holistic nutritionists, acupuncturists, herbalists, and naturopathic doctors to share their knowledge with you in classes and workshops we host here at New Leaf. Movie Night: Forks Over Knives

Forks Over Knives (2011) is an film that examines a profound claim that food is medicine! The major storyline in the film traces the personal journeys of a pair of pioneering researchers, Dr. T. Colin Campbell and Dr. Caldwell Esselstyn, and their groundbreaking studies that brought them to meet each other. Their research led them separately to the startling and now shared conclusion: degenerative diseases like heart disease, type 2 diabetes, and even several forms of cancer, could almost always be prevented—and in many cases reversed—by adopting a whole-foods, plant-based diet. Despite the profound implications of their findings, their work has remained relatively unknown to the public... until now. The filmmakers travel with Drs. Campbell and Esselstyn on their separate but similar paths, from their childhood farms where they both produced “nature’s perfect food”; to China and Cleveland, where they explored ideas that challenged the established thinking and shook their own core beliefs. The idea of food as medicine is put to the test. Throughout the film, cameras follow ‘reality patients’ who have chronic conditions from heart disease to diabetes. Doctors teach these patients how to adopt a whole-food, plant-based diet as the primary approach to treat their ailments—while the challenges and triumphs of their journeys are revealed. Forks Over Knives utilizes state of the art 3-D graphics and rare archival footage. The film features numerous leading experts on health, examines the question “why we don’t know,” and tackles the issue of diet and disease in a way that will have people talking for years.

Class # 2 Wednesday, April 17: Choose Smart Carbs- Carbohydrates, often referred to as carbs, are found in more than just bread. Of the three macronutrients – carbohydrates, fat, and protein – carbs have the greatest impact on blood sugar levels. Explore seasonal options for smart carbs, including vegetables, grains, and legumes. Class #3 Wednesday, April 24: Embracing Healthy Fats- Although our modern culture has distorted our perspective on fats, some fats are essential for optimal health. Historical and scientific evidence show that our ancestors did not suffer from many modern chronic diseases even though they ate wholesome, unprocessed fat-rich foods. Discover our favorite sources of fats and how they are part of a healthy diet. *Please sign up for each class to ensure your spot does not get taken. This class fills up- priority will be given to those who are on the list. About the Instructor: Madia graduated from Bauman College of Holistic Nutrition in 2013 after completing her BA in Environmental Studies and Exercise Sports Science at UCSB. Shortly after, she started her personal consulting business My Healing Habits. Japanese Comfort Food: Ramen Bowls

With Chef Eric Adema, Owner of Plus 1 Catering In this class you will learn the basics of traditional Japanese home cooked meals. We will begin with a quick demo on how to make Dashi - which is the base of several popular dishes, including our first dish Miso Soup. Next we will prepare Salmon Teriyaki with a Buckwheat Soba Noodle Salad followed by Pork Tonkatsu with a Curry Ramen Bowl. We will focus on technique so you will leave with the knowledge & confidence to experiment with numerous variations of these dishes at home. Beer or Sake will be available to pair with items as we snack on our creations throughout the evening for those 21+ About the Instructor: Chef Eric Jan Adema first learned his passion for food while cooking his great grandmother’s recipes with his mother as a kid. In 1989 his family took over the Boulders Inn in Connecticut, and by age 24 he became the head chef . In 2003, Eric moved to San Francisco where he worked as a chef & restaurant consultant for over 10 years. He now lives in Boulder Creek .

With Chef Eric Adema This class will focus on the technique involved in making 4 dim sum favorites.  We will start with spicy shrimp & scallop shu mai then hand roll dough for Pork Xiao Long Bao or “soup dumplings,” as well as BBQ chicken Char Sui Bao or ”steamed buns” and Hong Kong style egg custard tarts. ” With the first three savory items we’ll be tasting our creations with some simple homemade dipping sauces. The bamboo steamers will be going nonstop so we can feast on our creations throughout the whole class! Beer and wine pairings available for those 21+ About the Instructor: Chef Eric Jan Adema first learned his passion for food while cooking his great grandmother’s recipes with his mother as a kid. In 1989 his family took over the Boulders Inn in Connecticut, and by age 24 he became the head chef . In 2003, Eric moved to San Francisco where he worked as a chef & restaurant consultant for over 10 years. He now lives in Boulder Creek .

Regional Spanish Cooking: Catalan Fideuá!

With Chef Laura Casasayas-Pala Catalan cuisine comes from the state of Catalonia in Spain, where they celebrate the Mediterranian diet, using ingredients like vegetables, fish, olives, olive oil, spices and legumes.  In this class Laura will teach you how to make classic recipes served in la Boqueria, a market located in las Ramblas Barcelona. La Boqueria is the most popular market in Europa and considered one of the best food markets in the world. We will explore classic Catalan dishes like: Gazpacho soup, Fideuá, (similar to paella but with noodles) and Poached Pears for dessert, all paired with Spanish wine! Fideuá is a dish that originated in Valencia, and was adopted by Catalonia culture, now one of the most popular dishes and ordered by tourists and locals. Like Paella, fideuá was created by Valencian fishermen by using the seafood scraps that they had not been able to sell in the markets during the day. About the Instructor: Laura Casasayas was born in Catalonian, Spain and raised around food, stories and traditional cooking. Her grandmother taught her the magic of what ingredients make a delicious, nutritious homemade Spanish dish. Laura is a Spanish Acupuncturist, Dietitian and creator of the 11th Hour Coffee food menu. Laura has more than 10 years running her own practice in Spain. she Recently moved to Santa Cruz and has a very strong desire to keep educating and expanding awareness in mindful and healthy eating.
