A big part of our mission is to provide the latest information about health, nutrition and wellness to our community. So we invite top local experts and educators, including natural chefs, holistic nutritionists, acupuncturists, herbalists, and naturopathic doctors to share their knowledge with you in classes and workshops we host here at New Leaf. Come to this nutrition session to learn more about fermented foods and what probiotics do for your health. Get tips on how to incorporate these beneficial foods into your diet, and sample some of Madia's favorite products. About the Instructor: Madia graduated from Bauman College of Holistic Nutrition in 2013 after completing her BA in Environmental Studies and Exercise Sports Science at UCSB. Shortly after, she started her personal consulting business My Healing Habits. She enjoys educating on how to heal inflammatory and autoimmune conditions, and believes in the food-as-medicine approach.

Dim Sum Workshop

With Chef Eric Adema This class will focus on the technique involved in making 5 dim sum favorites.  We will roll out dough and hand press: vegan sweet pea & mushroom Har Gow or “crystal dumplings,” spicy shrimp & scallop shu mai,  pork xiao long bao or “soup dumplings,” BBQ chicken Char Sui Bao or ”steamed buns,” and Hong Kong style egg custard tarts.  The bamboo steamers will be going so we can feast on our creations throughout the whole class.  Beer & wine pairing will be available, and recipes will be provided for doughs, fillings, & dipping sauces.  About the Instructor: Chef Eric Jan Adema first learned his passion for food while cooking his great grandmother’s recipes with his mother as a kid. In 1989 his family took over the Boulders Inn in Connecticut, and by age 24 he became the head chef . In 2003, Eric moved to San Francisco where he worked as a chef & restaurant consultant for over 10 years. He now lives in Boulder Creek .

Learn to Shop on Your Bike!

With Matt Miller, Program Specialist at Ecology Action Every wonder what it would be like to ride your bike for a grocery store run? The freedom of movement, the easy bike parking right up front, and not hassling with parking your car. In this new class we'll look at making your trips to the grocery store by bike. How are you supposed to carry all of your goods on two wheels? We'll peel back the layers on how make a store run successful. Do I need a basket or panniers? What even is a pannier anyway? Different ways to pack your supplies, distributing weight, and knowing when too much is too much. The best part is, you can add that extra dessert item to your grocery list because you biked there, you need the calories to get home! Join us to learn the ins and outs of shopping by bike. One lucky class participant will be drawn to win a "Grocery Getter Kit" from Blackburn Design including a front rack, rear rack, and set of grocery panniers.  Each *REGISTERED* participant will recieve a FREE Klean Kanteen!! About the Instructor: Matt Miller works as the Sustainable Transportation Program Specialist for Ecology Action. Among other projects, he manages Santa Cruz County Bike to Work Day. He's been bike commuting in Santa Cruz for 10 years and has several hundred successful grocery store runs by bike to his credit. Whether it's making a quick run for meal ingredients or stocking up for the week, Matt has done it all. From grocery shopping, to moving houses, to biking cross country, Matt brings a depth of bike experience that will help unpack the nuance to shopping by bike. About Ecology Action: Ecology Action is a nearly 50 year old non-profit that brings innovative programs to people, businesses, and communities to help them achieve environmental and economic sustainability. About the Instructor: Madia cultivated her creative side with colored pencils and has only recently branched out to watercolor, a new and exciting medium. With Chef Laura Casasayas Pala Join Chef Laura in preparing fine versions of the most tasty and authentic Spanish Tapas. Enjoy experimenting with different textures, flavors and ingredients in this hands-on cooking class that will feature gazpacho, creamy black rice and calamari, Txacha, ham and cheese fried roll, and stuffed red pickled pepper! Savor your tapas with a glass of Spanish wine. Do you know where the word "tapas" comes from? King Alfonso XIII was on an official visit to Cadiz, southern Spain, sitting in a restaurant next to the beach. He asked for a glass of wine. Suddenly the wind rose. The waiter covered the wine glass with a slice of ham. The king, curious, asked why the waiter had done that. He explained that he had put a TAPA (top in English) to the cup to protect the Wine from the Sand. The King liked the idea and when he finished his first glass of wine he decided to order another glass of wine with the same TAPA. That's why in some of the wineries and bars in Spain offer food with your glass of wine or beer. About the Instructor: Laura Casasayas was born in Catalonian, Spain and raised around food, stories and traditional cooking. Her grandmother taught her the magic of what ingredients make a delicious, nutritious homemade Spanish dish. Laura is a Spanish Acupuncturist, Dietitian and creator of the 11th Hour Coffee food menu. Laura has more than 10 years running her own practice in Spain. she Recently moved to Santa Cruz and has a very strong desire to keep educating and expanding awareness in mindful and healthy eating.

About the Instructor: Brayden Estby grew up in Aptos, California his whole life. He lived in Australia for some time and in Tahoe for the three winters. Brayden wanted to find a career path that would satisfy all his passions to the highest degree. 11th Hour Coffee arose from the ground with the intention of the 11th Hour defintion being fluid. The 11th Hour is what it needs to be subjectively for you in order gain inspiration for action and change.
