- 1 1/2 cups cooked quinoa
- 2 cups arugula leaves
- 1 pint strawberries, sliced
- 1/2 cup toasted walnuts, chopped
- 1/2 cup crumbled feta cheese
- Juice of 1 lemon
- ½ cup extra-virgin olive oil
- ¼ cup cider vinegar
- ½ cup maple syrup
- Salt and black pepper
In a large bowl, combine quinoa, arugula, strawberries, walnuts and cheese. In a small bowl, combine lemon juice, olive oil, cider vinegar and maple syrup. Toss the quinoa with the olive oil mixture and add salt and black pepper to taste. Serve chilled or at room temperature.Recipes Home
