- 2 Tbsp brown sugar
- 1 tsp paprika
- 1 tsp rosemary, crushed
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 2 lb boneless pork tenderloin
- 2 tablespoons olive oil, divided
- 2 medium Fuji apples, thinly sliced
- 1 medium onion, thinly sliced
Preheat oven to 425°F.
Mix brown sugar, paprika, rosemary, garlic powder, and salt in a large bowl.
Once mixed, set aside 1 tbsp for later.
Brush pork with 1 tbsp of the olive oil and sprinkle seasoning mixture
Place in center of large, foil-lined baking dish.
In a medium bowl, toss apples, onions and 1 tbsp olive oil. Add remaining seasoning mixture and toss to coat well. Spread around pork in pan.
Roast 25 to 30 minutes or until pork has internal temperature of 145°.
Slice pork and serve with apples and onions on top.Recipes Home
