A big part of our mission is to provide the latest information about health, nutrition and wellness to our community. So we invite top local experts and educators, including natural chefs, holistic nutritionists, acupuncturists, herbalists, and naturopathic doctors to share their knowledge with you in classes and workshops we host here at New Leaf. Class # 1 Wednesday, June 6: Start Your Day with Protein- Healthy habits developed early last a lifetime and breakfast is one of the best habits to establish. Eaten regularly, a protein-rich breakfast can be life changing! Learn how to incorporate protein-rich foods into your breakfast routine. Get tips for meals outside the breakfast box. Class # 2 Wednesday, June 13: Choose Smart Carbs- Carbohydrates, often referred to as carbs, are found in more than just bread. Of the three macronutrients – carbohydrates, fat, and protein – carbs have the greatest impact on blood sugar levels. Explore seasonal options for smart carbs, including vegetables, grains, and legumes. Class #3 Wednesday, June 20: Embracing Healthy Fats- Although our modern culture has distorted our perspective on fats, some fats are essential for optimal health. Historical and scientific evidence show that our ancestors did not suffer from many modern chronic diseases even though they ate wholesome, unprocessed fat-rich foods. Discover our favorite sources of fats and how they are part of a healthy diet. With WSET Certified Kristen Valenza, Living Roots Food & Floral Take a culinary trip to Valencia, Spain, in this hands-on class where Kristen will show you how to prepare traditional paella, and pair it with a Spanish red blend. Traditional paella is a mix of spanish rice, vegetables, meat, (like chorizo and sausage) and seafood, (clams, mussels, shrimp) and aromatic spices like parsley and saffron. Paella is a Valencian word, and comes from paelle, meaning pan. Wine pairing included. About the Instructor: Kristen grew up in New Jersey where she began cooking with her family at a young age, learning the roots of Italian and Mediterranean cooking. Kristen found a passion for traveling and experiencing other cultures through food, wine, and good company. She brought her expertise to Santa Cruz, where she teaches cooking classes and offers high quality catering through her business Living Roots Food and Floral.

With WSET (Wine & Spirit Education Trust) Certified Kristen Valenza Want to learn how to taste wine, but don't know where to start? We've got you covered in this fun intro-style tasting class! This class will explore the basics of wine as we travel through local varietals from Santa Cruz County, which can be compared to the Burgundy region of France. We will also taste wines from the Napa Valley region, comparable to Bordeaux. Class will start with a tour of MJA winery, (next door to New Leaf)! Kristen will take you through seven popular wines: Sauvignon Blanc, Chardonnay, Rosé, Pinot Noir, Cabernet Sauvignon, and a dessert Wine. This class will cover wine production, key attributes of a particular varietals, geographic regions, and terroir.  About the Instructor: Kristen grew up in New Jersey where she began cooking with her family at a young age, learning the roots of Italian and Mediterranean cooking. Summer Mango Desserts: A Cooking Class

With Nissa Pierson, Cooking Instructor & Food Writer Can I get more mango in my dessert, please? A mango’s natural sweetness lends itself to decadent and sweet desserts without the need for extra sugars and sweeteners. The innate complexity and rich flavor of a mango creates intrigue and sparks excitement in any eater. A mango’s varied textures add interest and structure to a dish, making them both fun to work with and a versatile ingredient. In this class, taught by mango expert and culinary instructor extraordinaire, Nissa Pierson, you will learn how to select and gauge ripeness per mango varietal, store and use fresh mangoes. You’ll also learn how to cut mangoes according to your comfort and prowess with a knife.  We’ll work with a few different kinds of mangoes in this class, comparing their unique traits and playing up their strengths to various desserts. You’ll see firsthand how the Ataulfo Mango’s sweet caramel-citrus essence carries a tinge of chili and a buttery creamy flash, making really incredible cupcakes with a silky, smooth frosting. The Tommy Atkins Mango has a mild flavor, albeit a tad tart, with firm flesh making them great for hand pies and retaining texture. The Kent Mango boasts a super perfumed and tropically sweet air, making any panna cotta and passion fruit glass otherworldly. The Keitt Mango works splendidly with pavlovas, with a tangy and sweet flavor and velvety texture, perfect for drippy sweet mango nectar.  Mangoes please crowds at any time of year, but they scream warm climates and sunny skies, making now a great time to learn more about what they’ve got to offer! You’ll soon be the unusual diner asking for more mango in your (fill-in-the-blank).  Class participants will get to take home a box of mangoes! About the Instructor: Nissa Pierson has traveled the world working with organic, fair-trade farmers, industry professionals and chefs specializing in sustainable food. She’s clocked over 20 years working the gamut of farm to fork. One thing she carries with her wherever she goes is an unwavering passion for mangoes. The flame was ignited back in 2006 when she took her first trip to a Mexican mango orchard.
