We know it’s not usual for food stores to think of themselves as educators, but we’re not your usual market. A big part of our mission is to provide the latest information about health, nutrition and wellness to our community. So we invite top local experts and educators, including natural chefs, holistic nutritionists, acupuncturists, herbalists, and naturopathic doctors to share their knowledge with you in classes and workshops we host here at New Leaf. Wellness Series with Nutrition Consultant Madia Jamgochian Join us for this FREE 4-week series during the month of January and learn how to spring into health with the following nutrition related topics: Class # 1 Tuesday, April 3: Start Your Day with Protein- Healthy habits developed early last a lifetime and breakfast is one of the best habits to establish. Eaten regularly, a protein-rich breakfast can be life changing! Learn how to incorporate protein-rich foods into your breakfast routine. Get tips for meals outside the breakfast box. Class # 2 Tuesday, April 10: Choose Smart Carbs- Carbohydrates, often referred to as carbs, are found in more than just bread. Of the three macronutrients – carbohydrates, fat, and protein – carbs have the greatest impact on blood sugar levels. Explore seasonal options for smart carbs, including vegetables, grains, and legumes. Class #3 Tuesday, April 17: Embracing Healthy Fats- Although our modern culture has distorted our perspective on fats, some fats are essential for optimal health. Historical and scientific evidence show that our ancestors did not suffer from many modern chronic diseases even though they ate wholesome, unprocessed fat-rich foods. Discover our favorite sources of fats and how they are part of a healthy diet. Class #4 Tuesday, April 24: Eat More Veggies- Ever heard of nutrient density? This is a term that measures the nutrient concentration in a food, per calorie. Vegetables are at the top of this list. Low in carbohydrates but chock full of vitamins and minerals, veggies come in a rainbow of colors, and each color signifies a unique nutrient composition. *Please sign up for each class to ensure your spot does not get taken. This class fills up- priority will be given to those who are on the list. About the Instructor: Madia graduated from Bauman College of Holistic Nutrition in 2013 after completing her BA in Environmental Studies and Exercise Sports Science at UCSB. Shortly after, she started her personal consulting business My Healing Habits. With Certified Nutrition Consultant Madia Jamgochian The average American consumes upwards of 150 pounds of sugar per year. Added sugar hides in unsuspecting places such as sauces, soups, condiments and even sausages and hot dogs. Overconsuming added sugar, and carbohydrates in general, can put a strain on the body and lead to inflammation and elevated blood sugar, both of which have been shown to contribute to chronic disease. There are easy ways to reduce your sugar intake–education is the first step! Part 1: Wednesday, April 4: Learn how to identify sugar sources, sugar swapping, balanced meals, and reading labels. Vinyasa Yin (Yang-Yin) Yoga

Strength, Balance, Yin, Restore This practice starts with stretching and builds to a standing flow of postures that become the Yang (or heated male energy) to build strength, mobility, and heat during the first half of class. Mid class, incorporates balance poses to build balance strength and posture. The last half of class, we will sink into Yin (or cooling female poses) that stretch the ligaments and connective tissue to increase flexibility and joint mobility. Yin poses are held longer using body weight at a feel a good stretch or edge which makes Yin much more effective at improving flexibility and joint health. The final pose or two will be restorative. Restorative poses provide time for the body to relax and the mind to meditate while feeling a nice stretch,improving flexibility, spinal alignment, unwinding, and finding inner peace.

Regional Spanish Cooking: Paella

With WSET Certified Kristen Valenza, Living Roots Food & Floral Take a culinary trip to Valencia, Spain, in this hands-on class where Kristen will show you how to prepare traditional paella, and pair it with a Spanish red blend. Traditional paella is a mix of spanish rice, vegetables, meat, (like chorizo and sausage) and seafood, (clams, mussels, shrimp) and aromatic spices like parsley and saffron. Paella is a Valencian word, and comes from paelle, meaning pan. Wine pairing included. About the Instructor: Kristen grew up in New Jersey where she began cooking with her family at a young age, learning the roots of Italian and Mediterranean cooking. Kristen found a passion for traveling and experiencing other cultures through food, wine, and good company. She brought her expertise to Santa Cruz, where she teaches cooking classes and offers high quality catering through her business Living Roots Food and Floral.

Are you giving up dairy for your health but miss old favorite recipes using cheese? Or are you simply in search of great whole food, plant-based artisanal experiences? In this hands-on class with Chef Beth Love, author of the cookbook series Tastes Like Love, you will learn to make three delightful cultured artisanal vegan cheeses: Semi-Firm Cashew Cheese in a variety of flavors, Parmesan-Style Cheese, and Semi-Firm Almond Cheese. In this class you will experience: • A cheese tasting party in which you can sample many varieties of cheeses along with accompaniments like raw crackers and fruit • An introduction to nut cheese culturing techniques • Practice with the tasks associated with each phase of the nut cheese creation process • Information about the benefits of replacing dairy products with whole, healthy, plant-based alternatives • Fun connection in community • Recipes to be able to make the cheeses again at your home • A small ceramic cheese mold full of the cheese flavor of your choice Children ages 8 and up are welcome and encouraged to attend when accompanied by an adult. Miso Making Workshop

With Masumi Diaz and Eriko Yokoyama of Hakouya Cooking School Miso is a delicious, high-protein seasoning that has been used everyday in the Japanese kitchen for 1300 years. This traditional paste is made with cooked soybeans, Koji and sea salt, then fermented for about 6 months. The fermentation process restores beneficial probiotic that helps break down the amino acids in soybeans and makes other foods easier to digest.  In this class you’ll learn how to make 2 lb organic miso to take home. Masumi and Eriko will share different ways to incorporate miso into your everyday diet. Since this is a simple but lengthy process, ingredients will be prepared for you in advance and assembled together in class. About the instructors: Health nut friends Eriko and Masumi started making Miso, Natto, Pickled plum and Sauerkrau together for the family more than a decade ago. They learned so many things over the years about fermented foods and recognized the importance and benefits of it for gastrointestinal health. Both Eriko and Masumi grew up with a probiotic-rich traditional Japanese diet in Japan. Eriko learned authentic French cooking at Le Cordon Bleu in Paris and owned a restaurant for 13 years. About the Instructor: Madia cultivated her creative side with colored pencils and has only recently branched out to watercolor, a new and exciting medium. Sushi Making Workshop: Shrimp, Crab and Tempura

With Certified Sushi Chef Carlos Mayorga In this hands-on class, Carlos will teach you how to make shrimp, crab and tempura rolls from scratch. This class will use white rice as a base, and other fresh ingredients to compliment the seafood. You will feast on your finished creations at the end of class, and take a roll home for later. Saké included. About the Instructor:Carlos started out as a tempura chef in sushi restaurants when he discovered his passion for sushi. He persued this interest and signed up for Sushi School here in Santa Cruz to become a professtional sushi roller. Carlos works for Mai Sushi here in New Leaf's Westside location.

Strength, Balance, Yin, Restore This practice starts with stretching and builds to a standing flow of postures that become the Yang (or heated male energy) to build strength, mobility, and heat during the first half of class. Mid class, incorporates balance poses to build balance strength and posture. The last half of class, we will sink into Yin (or cooling female poses) that stretch the ligaments and connective tissue to increase flexibility and joint mobility. Yin poses are held longer using body weight at a feel a good stretch or edge which makes Yin much more effective at improving flexibility and joint health. The final pose or two will be restorative. Restorative poses provide time for the body to relax and the mind to meditate while feeling a nice stretch,improving flexibility, spinal alignment, unwinding, and finding inner peace.

Class # 2 Tuesday, April 10: Choose Smart Carbs- Carbohydrates, often referred to as carbs, are found in more than just bread. Of the three macronutrients – carbohydrates, fat, and protein – carbs have the greatest impact on blood sugar levels. Explore seasonal options for smart carbs, including vegetables, grains, and legumes. Class #3 Tuesday, April 17: Embracing Healthy Fats- Although our modern culture has distorted our perspective on fats, some fats are essential for optimal health. Historical and scientific evidence show that our ancestors did not suffer from many modern chronic diseases even though they ate wholesome, unprocessed fat-rich foods. Discover our favorite sources of fats and how they are part of a healthy diet. Class #4 Tuesday, April 24: Eat More Veggies- Ever heard of nutrient density? This is a term that measures the nutrient concentration in a food, per calorie. Vegetables are at the top of this list.
